If your kiddos are anything like mine, they love summertime.
Summers at our house are for rest and a vacation here and there, even if it’s just a weekend trip to our cabin. And, I know for some parents you are constantly on-the-go during the summer.
That’s why I thought it would be fun to put together a list of yummy summer snacks that are not only easy to put together, but also healthy. (Shhhh… don’t tell your kids!) My kids LOVE these snacks and I’m sure yours will too!
Fruit and Veggie Smoothies
We love our Vitamix blender for making delicious and nutritious smoothies. Throw in a liquid (water, juice, or any kind of milk–dairy, oat, almond, coconut, etc.), add plain Greek yogurt and/or peanut butter for protein, and fresh or frozen fruits and veggies, blend, and voila! I’ve found that even picky eaters love this nutritious snack as it appears to be more of a “treat.”
Whole Wheat Toast with Organic Peanut Butter, Banana, and Honey
I mean is there anything better than bananas and peanut butter? For those who are allergic to peanut butter, you can substitute peanut butter for sunflower butter or almond butter. And, while Nutella isn’t the healthiest option, it is another alternative to peanut butter. To make this treat even healthier, purchase local honey from your farmer’s market.
DIY Trail Mix
Is it just me or does trail mix bring back fond childhood memories? I love when I’m cooking and it’s something that my kids can help me with. DIY Trail Mix is the perfect snack for any age to assist when it comes to combining ingredients. From nuts, seeds, dried fruit, pretzels, and more your kids can feel like young chefs. And, of course, if you do want to add something sweet into the mix consider yogurt covered almonds, raisins, or pretzels.
String Cheese and Whole Wheat Crackers
I don’t know what it is about string cheese, but my kids love it. Adding whole wheat crackers to the mix, makes this one of the easiest grab-n-go snacks. Plus, string cheese doesn’t make a big mess so it’s great for if needing a quick pick-me-up on a road trip.
Blueberry Baked Oatmeal
While this snack does involves prep time, if you’re a meal planner you need to add this recipe to your list. Think of baked oatmeal as if it were a type of granola bar. You can cut it into squares to eat with your hands or add a scoop of Greek yogurt on top. And, the best thing about this recipe is if you’re kids aren’t a fan of blueberries, you can change it up and use apples, raspberries, or strawberries. Really any fruit pairs well in baked oatmeal.
Popcorn
Can we all be grateful that popcorn is actually a healthy snack when not over eaten??? Get the family together for a movie night in on a rainy summer evening and pop your favorite brand of popcorn for a favorite snack to munch on. My husband makes the yummiest, stove-top popcorn with coconut oil and a pinch of pink sea salt!
Chips
I’m not talking about just any chips here. Although, I know my kiddos can eat their weight in Cheetos, I don’t want them to. When my kids beg for chips as a snack, I like to have healthier alternatives on hand such as kale chips, baked lentil chips, apple chips, or veggie chips.
